Is deep frying healthier than frying in a pan?

Deep frying is mistakenly perceived as preferable, as boiling the oil immediately closes the food and confirms less oil absorption. But deep-frying requires prolonged heating of the oil to high temperatures that can cause it to burn and make trans fat extremely harmful. Therefore, light and fast frying is often preferable, even if it allows the absorption of a higher amount of oil.
