The answer is divided into two parts. You can eat a large amount of food, even more than desired, with chopsticks in terms of food quantities. The main difference is in the way the food is prepared and served. Asian food is cut into small pieces and usually cooked at high speed due to the large contact area of the food and the form of cooking in the wok. These allow for the maintenance of higher nutritional values. Because food is cut into smaller pieces, it requires less chewing and is easier to digest, relative to the same food composition served in large amounts, as is common in the West.
