Chinese cooking in a wok is based on very fast frying, which is achieved by cutting the food into small pieces (which increases the contact area). If natural, unprocessed ingredients are used and frying with cold-pressed oils with a high smoking temperature is used, it is a reasonably healthy and quick form of cooking, suitable also for chronic heart patients.
