Chinese cooking in a wok is based on very fast frying, which is achieved by cutting the food into small pieces (increasing the contact area). If natural, unprocessed ingredients are used and cold-pressed oils with a high smoking temperature are used, it is a reasonably healthy and quick form of cooking, suitable also for chronic heart patients.
