Is Chinese cooking based on wok frying unhealthy?

Chinese cooking in a wok is based on very fast frying, which is achieved by cutting the food into small pieces (which increases the contact area). If cold-pressed oils with a high smoking temperature are used, it is a relatively healthy and quick form of cooking.
