Deep frying is often perceived as preferable, as the boiling oil closes the food immediately and confirms less absorption of the oil in the food. But deep-frying requires prolonged heating of the oil to high temperatures that can cause it to burn and make trans fat extremely harmful. Therefore, light and fast frying are preferable, even if it allows the absorption of a higher amount of oil.
