There is a misunderstanding about starches; they are a nutritious and satisfying food that does not cause obesity. Starches have been consumed throughout history.

It is essential to know that those who avoid carbohydrates and starches often compensate themselves by swearing in animal proteins and fats, which are especially inflammatory to the human body, especially since the animals we consume for food receive industrialized diets, antibiotics, hormones, and food designed for rapid growth and fat accumulation. In their natural form, starches are healthy, nutritious, and incredibly satisfying.

  • The fact that most of them have relatively high glycemic values (which quickly become sugar) is not the problem! Combining starchy foods such as potatoes, rice, corn, spelled, taro, and various grains with meat, poultry, and cow's milk products is not recommended. The combination is especially acidic for the intestines and encourages the proliferation of pathogens in the gastrointestinal tract.
  • Flour, especially white flour, is an industrialized product that does not contain dietary fiber. Gluten in cereals has a harmful effect, so it is advisable to reduce the consumption of gluten-rich cereals.
  • Starches should be consumed with natural fats such as butter, coconut, olive, or other natural oils. Oils aid digestion and lubricate the intestines.

Starches have been in the diet for thousands of years without side effects. Chronic morbidities such as obesity and type 2 diabetes have become an epidemic only in recent decades when processed and industrialized foods entered home kitchens. The combination of stress and constant anxiety is very harmful to health.
