Is Chinese cooking based on wok frying unhealthy for cancer patients?

Chinese cooking in a wok is based on very fast frying, achieved by cutting the food into small pieces (which increases the contact area). It is reasonably healthy and quick to cook if only natural foods are cooked with cold-pressed oils using only high smoking temperatures.
